Mixture will take 2 3 hours to freeze. 1 first prepare your fruit juice. Step 2 freeze for 1 hour. You should end up with about 1 1 2 to 1 3 4 cups of orange juice. The granita is ready when it resembles icy sand about 3 hours total.
One of my favorite granita memories is having icy cold cups of strawberry granita served with a little pitcher of tequila for pouring over at the last minute. If using a solid fruit purée it in a food processor or blender first then strain or alternatively put fruit through a juicer. Return to the freezer in increments of 30 minutes scraping with a fork to create small granules after each one. Once the sugar mixture is completely cooled add the fruit juice and mix well. Press the flesh of the oranges through the strainer to extract all of the juice.
Pour the mixture into a 9x9 baking dish and place in the freezer. Granita is a dessert eaten with a spoon that originated in sicily. For lemon granita 300ml juice will make 6 serves of granita. Apple granita puree four peeled and cored apples in a food processor with 1 2 cup water and the juice of one lemon to preserve the color. Freeze for 1 hour.

Add cup 125 ml sugar to 4 cups 1 l of your favourite fruit juice. Strain and you should have 2 cups juice. It is a mixture of water sugar and fruit juices which is then placed in the freezer. Pour liquid into a 13 by 9 inch baking pan. Combine the fruit lime juice sugar and salt in a blender or food processor fitted with the blade attachment.
To make a citrus granita simply juice the fruit. For watermelon granita 1kg fruit will make 6 serves of granita. Scrape mixture with a fork. Stir until sugar is dissolved and pour into a non reactive baking dish roughly 9 x 13 inches 3 l. Freeze until hard about 3 to 4 hours.
