We used oats combined with cashews to create a perfect sugar cookie base then we added the perfect flavorings and of course a few sprinkles for playful color. A prime culprit for dry sugar cookie dough is butter than is too warm and soft. I made 180 sugar cookie bites a few months back along with 180 espresso brownie bites. At this retreat meals are assigned by condo so we all pitched in to make these mini meatballs for italian wedding soup along with cobb salad green chicken chili asian ramen noodle salad and several other items. I also thought about naming these no bake sugar cake pops no bake sugar cookie dough bites or no bake sugar cookie pops but i liked the sound of bites better since that s what they are. Every holiday party needs them. A word about the butter we use sweet cream salted butter when we are baking and i think it tastes great with these sugar cookies too. These sugar cookie energy bites are both sweet and healthy.
