Mash squash with a potato masher or submersion blender until squash is mashed but still has some small pieces. Quick to prepare and good. Drain thoroughly in a large strainer pieces may fall through colander using a hand masher to squeeze out excess water. Bring a pot of water to a boil. Back to mashed yellow squash recipe.
Place back into saucepan and add butter. Add butter cream and seasonings to taste. This is great if you like yellow squash. Boil until tender 8 10 minutes. I reduced the butter to 2 tsp and added a little more onion and a clove of garlic to the cooking water during the last 4 minutes of boiling.
I have a fresh vegetable button on my microwave so i just use that twice. Place squash into boiling water adding 1 tsp of kosher salt. Drain the squash well place in a large mixing bowl and mash until slightly chunky. Add squash and onion. Sprinkle black pepper and serve.

Return to a boil then reduce the heat and simmer until squash is tender about 6 8 minutes. Looking for yellow squash recipes. Mash the squash slightly. I would reduce the milk next time to about 1 8 cup. Watch squash closely after adding milk.

I grate the squash in my food processor this way i don t have to mash it after it is cooked and then put it and the onion in a casserole dish with the lid on and stick it in the microwave. I used 1 5 lb of yellow squash. Place the squash in a large saucepan cover with water and boil until soft about 15 minutes.
