Place the lamb shanks on top of the sauce and spoon additional sauce over the top of the lamb so it is well covered. In the same frying pan put in the carrots onions garlic bay leaves and rosemary and cook slowly until nicely colored. Add an extra splash of oil if needed and fry the onions until translucent which will take about 5 minutes. This will take about 10 minutes. Preheat your slow cooker if necessary heat a large frying pan on medium high add half the oil and brown the lamb shanks all over then transfer them to the slow cooker. Transfer the vegetables to the slow cooker with the lamb shanks.

Slow cooking lamb shanks in a mix of red wine and lamb or beef stock means both the meat and the gravy have even more flavour. Top with onion and carrot mixture wine rosemary sprigs and bay leaves.
