Asparagus Roll Ups Puff Pastry

Asparagus rolls wrapped in puff pastry filled with cream cheese and topped with parmesan. Place on another baking tray and refrigerate. So simple and delicious it s the perfect side for any meal.

Ingredients 1 bunch asparagus about 12 16 ounces ends trimmed 1 tablespoon extra virgin olive oil kosher salt pepper 2 sheets frozen puff pastry thawed 8 ounces gruyere shredded 12 slices prosciutto 1 egg beaten. With the short side facing you cut the rectangle in half lengthwise. Roll the pastry sheet into a 12 x 9 inch rectangle. Divide the asparagus and roasted peppers between the pastry rectangles. Ingredients 1 pound fresh asparagus trimmed 4 ounces cream cheese softened 1 4 cup grated parmesan cheese 1 tablespoon stone ground mustard 2 teaspoons lemon juice 1 4 teaspoon salt 1 4 teaspoon pepper 1 package 17 3 ounces frozen puff pastry thawed 1 large egg 2 tablespoons water.

We love changing up our sides and although asparagus is one of our favorites we love to wrap it in puff pastry to make these delicious rolls that are perfect for any dinner. On a clean lightly floured surface roll out the puff pastry to 40cm x 25cm. Spread about 1 2 cup cream cheese mixture on each rectangle to within 2 inches of the edge. 3 fold over 2cm of the pastry from around the edges to create a border.
